KISSO PRESENTS UNI AND HAMO MENUSWITH COMPLIMENTS OF THE JAPANESE SEASON

Authentic yet inventive, Kisso Japanese restaurant at The Westin Grande Sukhumvit, Bangkok places great store on offering lovers of Japanese cuisine the true taste of Japan, as experienced in Japan itself. Now, like the formidable fishermen who ply the seas around Japan in pursuit of the finest catches, Chef Yone has located two premium summer-time delicacies – Uni and Hamo – to inspire an à la carte menu of special dishes offered throughout this July and August 2014.

Hokkaido "Uni" or “Sea urchin” is a delicacy highly prized for its light fluffy texture and rich yet subtle flavors and commands high prices in Japan’s top sushi restaurants. Though uni is most commonly appreciated in its raw form, it also possesses an uncanny versatility when paired with other ingredients. On the tongue, it turns into a soft, pillowy sensation that gradually disappears, leaving behind the ultimate expression of the ocean in a solid ingredient.

Recommended dishes on Kisso’s seasonal menu featuring “Uni” are priced from Baht 450++ to Baht 920++ and include: Sea urchin and tsubugai shell fish clear soup, Grilled prawn and sea urchin with sea urchin sauce, Rolled Japanese wagyu beef with sea urchin and Sea urchin tempura and fried sea urchin with rice cracker.

Hamo, or pike conger, is a white-meat fish from the eel family with a mild and light flavor. Its deep ripped mouth houses the sharp teeth from which it takes its English name. Caught between May and October, it is at its best in July. Believed to have invigorating qualities, it’s an especially popular summer dish in Kyoto, but its finicky preparation puts people off making it at home.

Dishes are priced from Baht 350++ to Baht 980++ and include: Hamo sushi, Hamo hot pot, Hamo and mushimi clear soup in tea pot, Soft boiled Hamo sahimi with 2 kinds traditional sauce and Hammo tempura with plum and tempura sauce.
