A chef like Chef Shinsuke and a restaurant like Kisso always push the limits but when it comes to creating a new Kaiseki multi-course menu – the Japanese equivalent of French "haute cuisine" – they take it all to another level of culinary virtuosity.

"Kaiseki" doesn't only refer to the format. It also indicates the collection of skills and techniques that allow the preparation of such meals. The results should be of the highest order and to achieve that requires years of training and experience and liberal measures of inspiration and creativity.

Now Kisso has created eleven artfully composed dishes offering the finest and freshest imported fish and vegetal delicacies. Together with soup, sides and a subtle dessert, all are appetizingly arrayed like traditional Japanese art on thoughtfully selected, beautiful vessels.

Offering dining as beguiling as it is satisfying throughout October only Baht 3,500 includes:

• Aperitif: kabosu citrus sake

• 1st Appetizer: Crab and vinegared chrysanthemum with crab miso paste

• 2nd Appetizer: Abalone sticky rice with sea urchin and seaweed

• Sashimi: 4 kinds

• Soup: Seabream rolled with mushrooms and sesame tofu

• Hot dish: Fried figs and foie gras in dashi stock

• Grilled dish: Autumn salmon, satsuma beef, marinade saury and tomato; Soaked salmon roe with grated daikon radish, baked egg and new lotus root rice cracker

• Simmered dish: Hair tail fish with Daiginjo sake served with daitokuji natto sauce

• Rice dish: Chestnut rice or Inaniwa udon

• Dessert: Gelidium jelly and seasonal fruit
