The iconic fish of Australia, Barramundi is the gastronomic item under the spotlight at Acqua in March. Fresh fillets are served on a pumpkin and mushroom puree or with a pachino tomato-caper-black olive sauce. Home-made ravioli will also receive a barramundi filling and is served in a light tomato and thyme salsa.
