And now Kisso's perfectionist chefs have announced their special menus for August-September, intensifying dining pleasure with a special ingredient that is either in high season or simply especially tasty these days.

Fresh Ayu (Ayu Shio Yaki) or Sweetfish, As Japanese as cherry blossom, these small members of the salmon family are the sweetest of all river fish. Ayu has a naturally watermelon-like-sweetness.

GRILLED SALTED-AYU FISH at Kisso, passionate chef cooks it on fire-grilling over a remarkable charcoal blend combining tamarind, mangrove and eucalyptus logs finishes the dish with a distinctive smokiness and inviting aroma.
