Throughout February at Liu Chinese Restaurant, Double-Boiled Black Chicken Soup with Sugar Cane, Goji and Sea Conch offers diners a delicate taste of the meat of the exotic Silkie chicken. With a succulent and slightly gamier taste than normal chickens and accented with pure sugarcane, this delicious soup is a treasure for those who enjoy the succulent art of neo-classic Chinese cuisine.
Most likely originating in ancient China, Black Chickens are also called Silkies, probably on account of their soft furry feathering, which may be white or another color, but is often jet black. However, their skin, beaks and even their bones are black. Often kept as ornamental fowl or pets, the Silkie is also a delicacy in a number of traditional and delicious dishes in China, Singapore and other Asian countries.
