The symbol of the Japanese Imperial House and an indicator that autumn has begun, the chrysanthemum flower, or 'Kiku’, has been venerated in Japan for thousands of years. During autumn, the flower is celebrated at festivals featuring lavish floral displays with chrysanthemum blossoms that have been specially cultivated for the occasion. At this time of year the flower’s fragrant petals are even included in traditional simmered and pickled dishes.

To celebrate the season of the chrysanthemum, Master Chef Shigeru Hagiwara at our MICHELIN Plate restaurant Yamazato has created authentic chrysanthemum Gozen lunch and a delicious multi-course Kaiseki dinner.

Highlights of the Gozen lunch include dishes such as simmered sweet fish with roe, pumpkin, carrot okura and yuzu with chrysanthemum sauce; and Amberjack with edamame garnished with sweet potato and pickled turnip.

Stars of the offerings on the Kaiseki dinner menu include the starter of torched marinated mackerel; a sashimi presentation encompassing tuna, yellow tail, seasonal saury fish, and sweet shrimp; and a grilled dish of Spanish mackerel with yuzu and scallop with butter, garnished with sweet potato, pickled turnip and ginko nuts.
