Khao Chae, which translates to "rice soaked in water," is a time-honoured dish traditionally enjoyed during the hot season. It features steamed rice steeped in iced, jasmine-scented water and served with a selection of savoury accompaniments, including shrimp paste balls, stuffed sweet peppers with pork and shrimp, sweet shredded pork, sweet shredded fish, deep-fried shallots, and stir-fried sweet radish.
Originating centuries ago as an offering by the Mon people during Songkran, the Thai New Year, Khao Chae became a cherished dish in the Thai royal court, valued for its cooling and refreshing qualities.
