INEO, the fine dining restaurant inside the luxury Anantara Palazzo Naiadi Rome Hotel, has been included among the new addresses selected by the Michelin Guide for the month of June. An important recognition that rewards the vision, technique, and sensitivity of Chef Heros De Agostinis, protagonist of a gastronomic proposal that tells the story of the world through Italian ingredients and international contaminations.

The cuisine of Heros De Agostinis is a symphony of tradition and research, where Italian raw materials open up to the world through spices, fermentations, techniques and inspirations ranging from Eritrea to Asia, all the way to South America. With an impressive international career, including over 25 years of experience in some of the most prestigious Michelin-starred restaurants, and a clear and refined vision of taste, De Agostinis signs dishes that narrate his unmistakable style: elegant, evocative, contemporary.

"Being selected by the Michelin Guide is an extraordinary emotion," comments Chef Heros De Agostinis. "It is a recognition that I share with my brigade and with the entire front-of-house team, because INEO is first and foremost a choral project. Here we cook stories: every dish is born from a journey, from a memory, from an emotion that we want to share with those who sit at the table."

Among the symbolic creations that best embody INEO's philosophy, stand out the Maccheroncini al ferretto cooked in a Madeira reduction, Eritrean ragout, and 24-month-aged Parmigiano - a dish that tells the meeting point between personal memory and culinary technique, a bridge between Africa and Italy.

The inclusion in the Michelin Guide represents not only a milestone, but a new starting point for INEO. A strong signal that certifies the solidity and strength of a gastronomic identity capable of moving, narrating, and innovating. In an intimate setting with only 28 seats, with impeccable service led by restaurant manager Damiano Verdone and an extraordinary wine cellar with over 900 labels selected by sommelier Federico Spagnolo, INEO confirms itself as one of the most refined fine dining experiences in Rome.
